Spanish Puff Pastry Pinwheels are an easy and delicious appetizer, filled with lots of Spanish chorizo and manchego cheese.

Chorizo Manchego Pinwheels

I am the self proclaimed queen of super fast dinners. You sort of have to get creative when you have a newborn and you’re using one hand to do all necessary daily tasks. I’m a wizard at one-handed bed making, one-handed-putting-on-pants and believe it or not, I’m typing this very blog post with uno hando {that’s Spanish for one hand incase you were wondering…don’t quit my day job? Ok.}

Are my super fast dinners traditional? Not really. Delicious? Yes.

As of late, we eat lots of pancakes, crepes, soup, sandwiches and random snacks thrown together for dinner. Today I’m sharing one of those ‘random snack’ dinners that came together quite nicely just a few days ago! I made these easy Chorizo Manchego Pinwheels and served them with some other appetizer-like snacks: veggies, dip, olives, sliced deli meats, cheeses and almonds.My two kiddos actually prefer snacks for dinner, so we do this pretty regularly.  I suppose you could call this dinner a kid-friendly tapas. I did use Spanish ingredients, after all.

I was able to find both my chorizo and manchego cheese at Fred Meyer. The location I shop at has a huge deli and specialty cheese sections. It’s glorious. I’m there so frequently that I’ve been known to literally help other shoppers find the smoked mozzarella and gouda. {Like, literally been like “Oh, its not over here, it’s over there. Here, let me show you.” Haha!}

If you can’t find chorizo at your grocery store, feel free to use a hard salami. If you can’t find manchego, use a hard white cheddar or parmesan. All would be delicious options.

By the way, starting in April, Fred Meyer will have all things Spanish because they are doing a Taste of Spain! That means they will have lots of products from Spain in their store available for purchase. Yes please!

Anyways, here’s how to make them:

Chorizo

Start by finely dicing some of that fabulous chorizo.

Also, grate some manchego too.

On some puff pastry, sprinkle the chorizo pieces and the grated cheese along with some salt {not a ton} some pepper and some dried parsley flakes. Roll this up as tight as you can and slice.

Get these little guys onto a baking sheet {you’ll get about 20 or so} and bake!

They are done when they’re all puffed and golden and that cheese has turned into crispy, delicious, edible GOLD.

Spanish Puff Pastry Pinwheels

Spanish Puff Pastry Pinwheels are an easy and delicious appetizer, filled with lots of spanish chorizo and manchego cheese.

Total Time 30 minutes

Ingredients

  • 1 sheet puff pastry half of a 17.3oz box, thawed
  • 1/4 cup spanish chorizo finely diced
  • 1/4 cup grated manchego cheese
  • salt & pepper to taste
  • 1/4 teaspoon dried parsley

Instructions

  • Preheat oven to 400 degrees. Line baking sheet with parchment paper or silicone baking mat and set aside. Unfold cold, but defrosted puff pastry and place onto floured work surface. Gently roll with rolling pin to ensure dough seams are together.
  • Sprinkle with chorizo, cheese, salt {don't use a ton!}, pepper and parsley flakes. Roll up as tight as possible and cut into twenty thin pinwheel slices. A serrated bread knife worked great for me!
  • Place pinwheels onto prepared baking sheet and bake for 12-15 minutes or until golden and cheese has melted and is crispy. Cool slightly and serve immediately. These taste best fresh!
