Chocolate Cookies for Sweet Pea Benefit Boutique
Well, I just got back from Chicago and I am so tired! There’s something about air travel that just wears me out! Anyways, a full recap of my trip will be posted on Wednesday, so look forward to that!This recipe I posted today is one that will knock your socks off! Super chocolaty, chewy and minty! These are one of our favorite kinds of cookies to make. EVER.
Now, the reason I’m posting this recipe is because these cookies are going to be part of a silent auction called the Sweet Pea Benefit Boutique. This auction is going to be helping out two families who can’t have children and who can’t afford in vitro fertilization. As a person who has some of the same problems as these women, I can relate to a lot of what they are going through. So, I offered up just a small item for bidding! The auction starts tomorrow and there are lots of other adorable items you can bid on. Please go take a look and do what you can {aka bid on my cookies!

Chocolate Mint Truffle Cookies
yield: 2 dozen large cookies

Ingredients:
1/2 cup butter, softened
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
1 cup all purpose flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1 1/4 cups chopped Mint Truffle Hershey Kisses or Peppermint Patties
Directions:
Preheat oven to 350 degrees. In large bowl, whip butter and sugar until light and fluffy. Stir in egg and vanilla and beat until pale yellow, 2 minutes. Gently stir in all dry ingredients until just incorporated. Scrape sides and mix again. Fold in chopped Mint Truffle Hershey Kisses and drop by the tablespoon full onto a greased cookie sheet. (about 8 cookies per sheet) Bake 8-9 minutes. Remove from oven, cool 3 minutes then transfer cookies to cooling rack.
