Friends came out onto Netflix at the beginning of the year. Perfect timing considering that is exactly when my husband left for his trainings.

So it only took me from then until now to get through the entire 10 seasons.

I’m not sure if I should be proud or embarrassed.

If loving Friends is wrong, I don’t want to be right.

In my defense, I haven’t had a husband for the past 100-something days, so what else am I going to do? Eat cookies?

Ok ok FINE. Besides eat cookies.

When I do dishes at night, or when I fold laundry at night, or when I work at night, or when I lay in my bed because I can’t fall asleep at night, I throw an episode of Friends on. And obviously that pattern has become a popular one in my life because I’m now finished the series.

In other news: I have nothing else to watch on Netflix. What is a girl to do?

I’ve thought about starting Friends up all over again, but thought I’d ask you all first at an attempt to branch out, if you will. So this is me “branching out”. What are the best shows to watch on Netflix? TELL ME EVERYTHING.

That is all.

Moving on, I made muffins! And they’re healthy. I know you find that hard to believe but it’s true!  I took my skinny banana muffin recipe and swirled in some chocolate almond butter to it because….why not. Also: I’m a rule breaker.

Best decision I ever made.

The warm gooey chocolate tops on these babies will have you and everyone who can smell these baking swoon. Not only do they present well, they taste pretty darn good too.

The trick to getting these to swirl beautifully is warming up your almond butter so you can drizzle it over the top of each muffin, then that way, you can swirl it in no problemo and not end up with big globs of chocolate almond butter…not that that’s a bad thing or anything…

There is no rhyme or reason to the swirling. Just use a toothpick and start moving it around. I found circles and back and forth movements worked the best for me.

After a quick bake in the oven, you have puffed, golden, deliciously sweet and healthy muffins.

Right out of the oven, because these muffins have barely any fat in them, they will be difficult to peel from their papers. It always works best when they are at room temperature. I peeled the paper, then heated the muffin slightly to eat.

Feel free to slice in half and schmear on the butter. OR more chocolate. I’m not picky.

My kids gobbled these up and I think lots of your kids will too. Plus, I definitely ate more than my fair share {whilst I was hidden in the pantry to avoid sharing and explaining why I was “spoiling my dinner”}.

True story.

Banana Almond Butter Muffins

The trick to getting the chocolate almond butter to swirl beautifully in these yummy Banana Almond Butter Muffins is warming it up so you can drizzle it over the top of each muffin.
servings 20 muffins
Prep Time 20 minutes
Cook Time 25 minutes
Total Time 45 minutes

Ingredients

Instructions

  • Preheat oven to 325 degrees. Line muffin tins with paper liners or spray with nonstick cooking spray and set aside.
  • In large bowl, stir dry ingredients together until combined. In separate bowl, whisk maple syrup, olive oil, egg whites and vanilla together until combined. Form a well in dry ingredients. Pour in mashed banana and wet ingredients. Stir until just combined. Spoon into prepared pans and set aside.
  • Lightly warm chocolate almond butter in the microwave for 20-30 seconds to loosen it up and drizzle 1-2 teaspoons over the tops of each muffin. Use a toothpick to swirl the chocolate into the batter and bake 20-25 minutes or until completely cooked.
  • Cool 3-5 minutes before removing from muffin tins. Serve warm or store at room temperature for up to 3 days.

    What could we substitute to replace the almond butter? This could be a great school snack but all things peanuts and nuts are forbidden… Some soy `nut` butter maybe? Adding maple sypup is a great idea – there’s plenty here in Québec, Canada – and you’re dead-on on the season!

    Love your site!! And this recipe looks great! Do you know if you can substitute the maple syrup with something else? I would love to make these but I have a very strong dislike of all things maple syrup. Also, ‘How I Met Your Mother’ is a great show to watch now that you have finished ‘Friends’.

    I just finished Friends too and last night was seriously contemplating starting all over again. I filled my void with The Office reruns but… I’m pretty sure I need the gang all back in my life.     How I Met Your Mother is VERY similar to Friends and satisfied my Friends void once I had watched the entire series. Gossip Girl is a good guilty pleasure and pretty over-the-top, but the fact that it was filmed in New York City made it particularly enjoyable for me!

    Have you seen the “commercial” on Netflix that talks about “binge” show watching. It advises the viewer to go spend time with their family, etc.

    Of course maybe I’m the only one who has seen it…..maybe I watch to many shows in a row.

    We like “Lie to Me”, “Flashpoint”, “Longmire”, I watched both seasons of the new Dallas (very trashy).

    These muffins look yummy and thank you for letting me know that I’m not the only mom who sneaks snacks all the while telling my kids “don’t eat that, it will spoil your appetite”.
