Chewy Cocoa Mocha Cookies

Chewy, double chocolate cookies with a hint of coffee flavor. These Mocha Cookies will knock your socks off.

My daughter started her Christmas list already…..because she’s my daughter and is always thinking 14 steps ahead. Whenever we’re out at a store and she asks for me to buy her something, instead of saying “no” flat out, I say “that would be a great thing to ask for Christmas!” So, inevitably, she started her list.

Among other things, she’s asking for ice skates, Elsa and Anna wigs, an Anna dress, girl legos, a pink princess watering can and a morticadenza pony.

No, that is not a typo. She wants a morticadenza pony.

I asked her to explain to me what exactly that was because obviously ponies have gotten more sophisticated since I was a child. Basically it’s a pony with wings and a spiral horn {not to be confused with a unicorn because allegedly they are two very different creatures}. This breed of pony is dark purple and pink with sparkles that speaks english and is everyone’s friend. I think he/she also wears red lipstick?!

Needless to say, Santa’s got his work cut out for him this year.

So, that should be fun to figure out in 5 months. I’ll keep you posted on what happens.

Anyways.

I made cookies for you…..and I guess for me too. They are sweet, chewy, chocolaty concotions with a hint of coffee flavor. All good things, all good things.

To be clear, I don’t drink coffee; never have, never will. #gross I do however know and love coffee extract. That’s what I used in this recipe. You can omit it to make just chocolate cookies, or find some lovely replacement such as instant coffee granules. OR! Try something adventurous like orange or peppermint extract! Talk about a party in your mouth, yo.

Start by creaming butter and sugar together…..simple enough, right?

Plop in an egg,

a little vanilla extract,

and coffee extract, or a different extract flavor or instant coffee granules. {Not to be confused with actual ground coffee.}

Whip it all together until it’s light and fluffy.

Measure out and stir in all the dry ingredients and then…

…add in some mini chocolate chips. Or regular chocolate chips. I like the mini ones because they disperse a little more evenly throughout the cookie dough, but regular chocolate chips are fine too. I’m not a hater. Chocolate is chocolate, yo.

Scoop the dough into cookies and bake for 8 minutes on the nose.

Chewy Cocoa Mocha Cookies

Chewy, double chocolate cookies with a hint of coffee flavor. These Mocha Cookies will knock your socks off.
servings 20 cookies
Prep Time 25 minutes
Cook Time 8 minutes
Total Time 33 minutes

Ingredients

Instructions

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
  • In a large bowl, cream butter and sugar together until smooth. Add in egg, vanilla and coffee extracts until light and fluffy. Scrape sides and stir again.
  • Measure all dry ingredients into the batter and stir until just incorporated. Scrape sides again and stir briefly.
  • Add in chocolate chips and mix another 10 seconds. Scoop into rounds on prepared baking sheet and bake 8 minutes.
  • Cool cookies 5-10 minutes on hot baking sheet to finish baking, then remove to cool completely. Store in an airtight container for up to 3 days.

Notes

*instant coffee granules can work in place of the coffee extract; you'll just have to dissolve it in the egg and vanilla extract before adding it to the dough.

    Just made these, used 1/4 cup oil and 1/4 cup butter (because my vegan friend’s cookies stay so chewy with no butter) and I added 1 teaspoon of cayenne pepper. They came out perfect and DELICIOUS!!! Thanks so much for such a great recipe!

    This is my new Favorite cookie!! Just made a batch for my hubs to take to work for a meeting. I hope they last until Monday! I was out of cocoa powder so I used a few tablespoons of semi sweet chocolate chips melted. This are so, so amazing!

      Hon, grow up. Two cookie geniuses could come up with a similar idea on their own without even knowing that the other person with the same idea exist. ( source: I am a psychologist) just because Lauren came up with the recipe that resembles yours, doesn’t mean you can degrade her and hog her recipe as your own. You aren’t the only one who can come up with a recipe and your claim sounds very much like a call for attention. Also, Lauren is awesome. And we all should be united together with the love of food, not arguing over stuff like this. Ciao

      Sounds like an accusation. It’s just a cookie recipe. Get a grip. I’m sure there are recipes you “think” you have created, only to find out that it was done 10-20 years ago. Bringing it up on her blog was downright rude.

      I would have been curious to check and perhaps follow your blog, but you can forget it now and I will let all my foodie friends know to boycott your blog as well.

    Just made these, yummy!!! They’re delicious! Question though, mine are not nearly as flat as yours. Mine didn’t spread so they’re smaller and poofier. Any thoughts as to why? Thanks !

      Mine didn’t spread either so I just used the back of a spatula to press lightly on them just after I took them out of the oven. I let them continue to cook/cool on cookie sheet….came out perfect! Hope that helps! 🙂

    Sound yummy! And as the mother of a 4 year old girl, my guess would be Princess Twilight Sparkle from My Little Ponies- she was a normal unicorn until she turned into an alicorn which is a unicorn with wings. She’s purple with a purple and pink mane and tail, and her cutie mark is a pink sparkle thing.

      Actually, I changed my mind- there’s another princess who they call Princess Cadance, but her real name is Princess Mi Amore Cadenza. She’s also an alicorn, and her horn is twisty. Her coloring is similar to Twilight Sparkle’s as well.
