Hold onto your hats friends, I’ve got another *fat pants* recipe for you, and this one is RIDICULOUS. I’m so so excited to be sharing this recipe with you today because it is so amazingly good!

A sweet cinnamon swirled cake, baked until perfectly moist and then dipped into melted butter and coated with cinnamon and sugar!! If that doesn’t make you excited for dessert, then I don’t know what will.

You have my friend Machel to blame. Last week, she employed me to create a clone to a very very similar item found at her grocery store a few weeks prior. I’m not one to back down from a challenge, so of course I gladly accepted and a few days later here she blows.

This is a pretty simple loaf to make, you just need to be prepared to get a little messy whilst dipping the whole loaf into melted butter…and then cinnamon and sugar.

Since we’re moving in the very near future and going to Hawaii in the…more nearer future {?!}, my life is insanity. Meaning, it’s filled with suitcases and boxes and a cranky baby that doesn’t nap.

It’s like a dream come true. So, not a whole lot of stuff to report…or stuff that you’d want to know about. I would tell you, bur it would be a total buzz kill.

In other news, do you all want to come to my house and pack a few boxes or hold a baby that may or may not scream in your face? That would be GRAND. πŸ˜‰

Now, perhaps I have taken this h.m. thing too seriously, but YOU GUYS–>these sandwiches are legit. They should run for president. They are soft, sweet, a little spicy from the mustard and oh so cheesy too! It’s my new favorite thing to make for lunch and my least favorite thing to work off at the gym. SO easy and SO yummy!

This past weekend, my little family and I had the opportunity to travel down to California to visit the Redwood National Park. Sometimes we get the hankering to get the heck outta town and hit the road. Since we live in Oregon and have been to every National Park in this beautiful state, we decided to head even further south to the Redwoods. We have always wanted to take our children here and we finally had the opportunity to make it happen.

YOU GUYS. You hear about the Redwoods and you see pictures but holy cow, these trees are HUGE. Like, the park rangers totally weren’t kidding.

We arrived late Friday night, so we rested up and got a nice early start Saturday morning, thanks to my children’s internal clocks waking them up and therefore all of us up at 6am. Ew. So we grabbed a little breakfast and headed over to the visitor’s center to pick up all the maps they had {hello no cell service}. We set out with a very loose plan and hoped for the best. The best adventures and memories are made when there are no strict plans! As we found hikes and different trails to explore, the trees kept getting bigger and cooler! Take a look at these pictures I snapped.

And, as expected, the trees are bigger and more beautiful in person.

Well, I was all ready to promote these as an Easter snack, but then I realized St. Patrick’s Day is only a few days away!

So you celebrate St. Patrick’s Day? Me either. I’m a little maxed out on the holidays, so I stick with the major ones and try not to mention the others to my kids.
My husband is 1/4 Irish {or is it 1/2?!}, so thats cool. He likes bringing up the “kiss me I’m Irish” thing even though I think it’s a big hoax for getting some extra lovin’. I’d like him even if he wasn’t Irish. Heck, I love him in spite of that fact. When I was pregnant with Blake, he was all gung-ho about naming our son after his rich Irish heritage. You know what name he came up with? Orian…as in the constellation Orian. But spelled O’Rian.

Considering we named our son BLAKE, guess who won that battle?

YOU GUYS. I just couldn’t have a child with an apostrophe in his name.

I think it’s a little ironic that I’m posting a recipe for energy bites when I have anything BUT energy these days.

Maybe it’s wishful thinking that these would actually give me magical energy to make it through the day slash somehow make my baby sleep longer than 3 hour stretches. Either way, I ain’t gots the energy to compete in my Dietbet. And this no processed sugar goal I made for myself is nearly killing me! Truth be told, I have given in a few times this week, but I blame that on lack of husband’s presence and lack of sleep.

I’m starting to understand why last time I had a baby I told myself “I’ll work out when I have the energy”.
