Baby Shower Goodies!

Over the weekend, I was able to co-host a baby shower for one of my friends. It was so much fun! I love doing little projects like this! AND, who are we kidding, I love food too. Especially when you make everything extra cute because it’s all in mini form. Love it! It was a lot of work, but in the end, it was great and everyone loved the food!

Also, take a look at this handsome little guy! So precious, right?! I got my turn holding him and I kept thinking “there’s no way my daughter was this small when she was born!” But, obviously she was! You forget so quickly how fast they grow until you compare your two year old to a newborn. I miss that baby stage a lot, but I certainly am enjoying my daughter at her age {not to mention my full night of rest!}

So here is all the food I made for the shower. Some of these recipes are new {which I will be sharing at a later date!} and some are tried and true Lauren’s Latest favorites. First up: my Mom’s Minty Squares. These are no bake super easy bars to whip up and everyone loves them! Typically, the center is supposed to be green, but I made it blue for the shower.

Next up: Mini Chocolate Cupcakes with Blue Butter Cream and edible pearls! It’s an elegant take on a very simple recipe. Probably my best, moistest chocolate cake original recipe. This was one of my favorites.

Did I go a little over board with the mini desserts? Is there such a thing as overboard? Not in my world! These are Mini Coconut Cream Pies. Another fancy looking treat that really didn’t take too much time or effort.

Of course I couldn’t leave out cookies. I made my Slice ‘n Bake Chewy Sugar Cookies in a mini form that I drizzled with a glaze and topped with sprinkles. The chocolate chip cookies are from Nestle Tollhouse, just shrunk down to baby shower size! The perfect snacking size!

And, finally, the party favorite: Lemon Cheesecake Creme Brule Bars. That’s right! You heard it here, folks! Lemon Cheesecake Creme Brule Bars. These fall under the life changing category. This recipe {unfortunately} gets a little asterisk because I can’t share this recipe with you quite yet because I entered it into the Pillsbury bake-off. I asked and they said no. :( Sad day. BUT, I promise that one day I will share this recipe and you all will DIE because they are THAT good. I hope the dough-boy thinks so too!

All in all, a great weekend! And, I would just like to say that my Healthy Eating Challenge did not get affected by my baking because I am awesome. I didn’t snitch a taste of anything I made. Do you know how hard that is to do? I deserve a metal.
