So my beloved Indulge Conference that I’ve been working on for months and months finally happened this weekend. I had a wonderful time talking with old friends, making new friends, showcasing lots of Portland goodies plus eating my body weight in doughnuts. I wish I was kidding…lol!!

But all that indulgence {see what I did there?} had to come to an end at some point and now I’m back on the health train. Salad anyone?

Honestly, after a weekend of eating whatever I wanted, I’m craving vegetables.

I know, I know. I was shocked too.

The trick for convincing myself to eat A LOT of salad is variation. If you keep switching things up, you’ll never get bored and getting those greens in won’t seem like a chore!

For the salad I’m making today, I tried taking all the necessary short-cuts to make this salad easy, interesting and delicious for me. That meant cooking the healthiest {and fastest cooking!} protein I know and using some SaladSavers {which are fun salad toppings packaged together for sale next to where all that pre-washed lettuce is at the grocery store.} For this recipe, I used the Zesty and the Sharp DeLallo SaladSavors, pre-washed lettuce, my favorite Italian dressing {Olive Garden kind} and some large shrimp.

Crazy simple to make, but OMG it’s delicious! And it’ll turn you into a salad lover, just in time for all this hot weather.

Here’s how to make it:

Start by marinating the shrimp in some of your favorite Italian dressing, black pepper and parsley. Let these sit for a few minutes before throwing them on the grill.

2-4 minutes later the shrimp is all cooked! Perfection 🙂

Now we can top our pre-washed lettuce with our SaladSavors.

What comes in these SaladSavors you ask? Well, we have crumbled feta cheese, grated white cheddar, sun-dried tomatoes, artichokes, olives and roasted red peppers. Pop those containers open and sprinkle them over your salad. Add the cooked shrimp, a little more dressing and that’s it!

Super easy to make, has a fabulous flavor, plus the sweet grilled shrimp tastes so amazing with all the other ingredients.  Nothing screams summer more than crisp, cold lettuce, a fabulous dressing and grilled protein.

Antipasto Grilled Shrimp Salad

This Grilled Shrimp Salad is a delicious way to get in those greens! If you love an antipasto platter, you'll love this salad!

Ingredients

For the shrimp:

  • 1 lb peeled and deveined large shrimp 21-30 ct.
  • 1/3 cup Italian Salad Dressing I used Olive Garden dressing
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried parsley flakes

For the salad:

  • 1 bag Italian Salad Mix or Spring Mix
  • 1/2 bunch fresh basil leaves torn
  • 1 Zesty Delallo SaladSavor feta cheese, calamata olives, red peppers
  • 1 Sharp Delallo SaladSavor white cheddar, artichoke hearts, sundried tomatoes
  • 1/4 red onion sliced thin
  • Extra Italian Dressing for serving

Instructions

  • Place shrimp, Italian dressing, black pepper and parsley into a bowl and toss. Marinade briefly while grill preheats.
  • Preheat indoor grill {or outdoor} over medium high heat.
  • Grill shrimp 2-3 minutes per side or until bright pink and opaque. Remove from heat and set aside.
  • Toss lettuce with basil leaves. Top with Delallo Salad Savor ingredients, onions and cooked shrimp. Drizzle over desired amount of Italian dressing and serve.

    I love antipasta salad but have never done it with shrimp, that is a great idea. I saw all the Indulge posts on Instagram, wish I knew about it ahead of time, would have LOVED to attend! Portland has AMAZING food!

    First of all let me say that Indulge was amazing! You all did a fabulous job with your first ever food blogger conference. 🙂 And I am right where you are- wanting ALL the healthy foods, lol! I spent the past 2 weekends doing foodie travel and eating ALL the foods, so I need a break from the overindulgence as well. 😉 And DeLallo? Love them! I used to live 15 minutes from their store in Jeannette! I shopped there every single week.
